This is the best apple pie ever. It is an American-style covered pie that just melts in the mouth. It is best baked with butter and served with vanilla ice cream or loosely whipped cream. It is surely no diet pie but oh so good. You just can’t get enough of it, My husband bakes the best apple pies and this one is the best and also the best known for it in the family.
Bake the pie in a round pie form, 24 cm or so in diameter. You might try making a slightly bigger pastry dough and using 300 g of butter and a bit more flour. You local organic apples if possible. I prefer muscovado sugar that is coarse cane sugar and almost always organic.
This is what you need for a double crust
6 dl flour
225 g butter
1-2 tbsp cold water
800 g apples
0.5 dl flour
2 tsp cinnamon
2 tsp ground nutmeg
0.5-1 dl Muscodovar or brown sugar
30 g butter
some caster sugar
1 Start with the pastry dough. Turn the flour and butter together making a smooth dough. Add a bit of water. You can mix the dough in a kitchen aid but you get a better feel to it if you mix it by hand. Cover a creased pie form with half of the pastry dough and cover the other half in plastic. Place both of them in the refrigerator for half an hour.
2 pre-heat the oven to 225 Celsius.
3 Make the filling. Pit and cut the apples into wedges. You do not need to peel them if you use organic apples.
4 Mix the flour, cinnamon, sugar and nutmeg in a bowl. Then add the apples.
5 Spoon the apples into the pie form. Add some butter shavings on the apples.
6. Roll out the other half of the dough for the to crust. Cut some steam vents in it and decorate with any excess dough.
7 Brush the top with butter and sprinkle with caster sugar. Bake in the lower part of the oven for about 40 minutes.
