Butter Cookies for Christmas


This is my second favourite Christmas cookie recipe after gingerbread cookie. I make two different cookies by adding flavour to the other half of the dough. The first half I use to bake heart-shaped cookies that I fill with raspberry marmalade and coat with icing. Then I mix cardamom and orange find into the other half and use a different shaped cutter. Both the cookies are delicious.
The heart-shaped ones I bake already before our wedding day in December and we have them most of December.

This is what you need for four baking sheets of cookies.

200 g butter
1 1/2 dl caster sugar
1 egg
4 dl all-purpose flour
2 tsp baking powder

1 tsp ground cardamom
2 tbsp orange rind

Mix the soft butter and sugar. Add the egg.
Mix the baking powder into the flour and turn the mixture in little by little.

1 dl icing sugar
1/2 – 1 tbsp red fruit juice
