Pancakes with Pecans and Chocolate Mascarpone


Good morning!
An early wintery Sunday morning with an ache in the sweet tooth.
Pancakes with sweet filling are a good remedy.

1 egg, 1,5 dl water, 1/2 tsp baking soda, 1 tbsp brown sugar, 1/2 tsp salt, 1,5 dl flour, dash of melted butter and more butter for frying the pancakes.

Mascarpone filling:
100 g mascarpone cheese, 2 tbsp confectioner’s sugar, 2 tsp cocoa

1 Whisk together the egg and water.
2 Add the rest of the ingredients and let rest for 15 minutes.
3 Make the filling while the batter is resting. Mix together all the ingredients.
4 Bake the pancakes in butter.

Enjoy with the filling and pecan nuts. Sprinkle with maple syrup. Yammy!
