Uove affogate con spinachi, Poached Egg with Spinach

Good morning! A sunny and bright Sunday morning, -5 C and blue skies.
Have to hurry out to catch some sun rays.

Our breakfast was poached eggs and spinach, coffee and oatmeal with blueberries.
Here you have the egg precise for two

2 eggs, water, 2 tbsp white wine vinegar, salt
150 g spinach, 1 tsp olive oil, black pepper and grated nutmeg

Boil the water and pour in the vinegar. Add salt.
Click one egg at a time in a glass, pour into a ladle and quickly drop into the boiling water. Cook for 3 -4 minutes.
Heat a small pan. Add the oil and a tablespoon of water. Add the spinach and cook for 3 minutes. Add some nutmeg, black pepper and salt.
Serve hot.
You can serve the egg with a couple of slices of strong cheese like Gruyère or Emmenthal, and naturally with bread.
