Salmon Swims with Smoked Pepper

It was ages ago I had tried a recipe in the day’s paper. This delicious fish sauce was in  Thursday’s Helsingin Sanomat (our national paper). My version is not exactly the same but almost – thank you and all the credit to Suvi Ruster.

This is what you need for three portions: 300 g Salmon, 4 garlic cloves, 1 belly pepper, 2 tsp smoked pepper, 1 dried chili, 2 tsp cummin Seeds, 1 tsp spice cummin, 2 tsp coriander, oil, 4 tbsp tomato pure, 1 cup/2,5 dl water, salt and a pinch of sugar

Heat the oil and sauté  the spices chrushed in a mortar. Add the garlic and pepper. Let simmer for 5 min. Add the water and bring to boil. Put in the fish cut into chunks. Cook for 5 minutes.

Serve with couscous with chopped parsley and coriander paste. I made small balls of couscous and spooned in the fish sauce.
