My experiments with pumpkin continues. I’ve been reading so many recipes and admiring other bloggers’ fantastic pictures. This muffin recipe was created in the go. I was planning on cookies and ended up baking muffins.
This recipe is for 12 muffins:
1,25 dl melted butter, 1,25 dl vegetable oil,1,25 dl pumkin purée, 2,5 dl coconut sugar, 2 eggs
2,5 dl almond flour, 2,5 dl flour, 2,5 dl graham flour, 1 dl oatmeal, 1/2 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp pumpkin spice, 2 tbsp sugar flavoured with vanilla, 1/2 tsp salt
Melt the butter. Mix the pumpkin purée and vegetable oil. Add the cooled butter and sugar. Add the eggs one by one.
Mix together all the dry ingredients. Stir them in the batter little by little. Place into muffin forms and bake for 15 minutes.
Enjoy as such or decorate with sugar-cream cheese frosting.
