Caramel Ginger Cookies

Today called for a repeat of ginger cookies. These are so quick to make and easy to bake.

For a batch you need 100 g butter, 1 dl brown sugar, 2 tbsp agave syrup, 2 1/4 dl flour, 2 tsp ground ginger and 1/2 tsp baking powder.

Mix the butter and sugar. Add the syrup. Then mix together all the dry ingredients and turn them into the butter -sugar mixture.

Roll out to  a thin sheet with a rolling pin. I do put the dough between to baking sheets. Place the sheet on a baking tin and bake in 175 C for ten minutes.

Let cool for a bit and cut with a cutter. Enjoy!

I could eat half of the tin immediately. See how lovely golden brown they are! And perfect on my second-hand give-away China plate.

Russian Morning Cookies

imageIt is not A Russian recipe I used but a recipe of Earl Grey cookies that I found in the supermarket recipe leaflet.

The contents of my tea bag jar was a lonely bag of Earl Grey and this is why I reached for the Kusmi Russian Morning jar. No white sugar either but coconut sugar.


This is recipe is for a batch of 50 cookies.

100g butter, 1 dl sugar, 1 egg, 1,5 dl flour, 1 dl graham flour, vanilla, 1/2 tsp baking powder, dash of salt, 1 big tbsp Earl Grey tea/  5 bags

Beat the soft butter and sugar until it is fluffy. Add the egg. Mix all the dry ingredients together and mix in the dough. Refrigerate the dough for at least half an hour.

Roll the dough out, half a centimetre thick and press out small round cookies with a glass. Place on baking paper on abating sheet. Bake in 200 C for 5-10 minutes.

The dough has a distinctive taste of tea which weakens slightly in the oven. Enjoy the cookies with tea to get the full experience.

Home-made Christmas Parcels

It is nearly Christmas and the Christmas break has begun. This year we wont’t be having a white Christmas but hoppfullt a ver memorable one. We will spend Christmas Eve here at home with some of the family. Most of the family was ovet last Saturday, the house was full it it’s mouth and ears … Of people, laughter, hugs & kisses and good food.

The students backed their bags and headed home to their families last week leaving the campus empy. The Christmas break started on Friday and now it’s time to xx the magic wan so that Christmas would be here. It is just around the corner. Plenty of spirits already – Just need some lights, smells and tastes. Parcels of cookies, biscuits and pears are on their way… A bit different than last year.
